Ingredients
Main Ingredients
- 1 pound sweet potato (peeled and cut into chunks)
- 1 tablespoon minced jalapeno
- ¼ cup chopped cilantro
- 2 teaspoons smoked paprika
- 2 teaspoons ground cumin
- 1 ½ teaspoons ground coriander
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon curry powder
- ½ teaspoon cinnamon
- 1 egg
- ½ cup panko breadcrumbs
- 2 tablespoons all-purpose flour
- 2 tablespoons oil (for frying)
Instructions
- Cook the Sweet Potatoes: Peel and cut sweet potatoes into medium-size chunks. Place in a medium pot and fill with enough water to cover. Cover the pot and bring to a boil over high heat. Reduce heat to medium and continue to cook until a fork can easily pierce through potatoes, about 15 minutes.
- Mash and Mix: Drain sweet potatoes and mash until smooth. Let cool slightly. Add minced jalapeno, chopped cilantro, smoked paprika, ground cumin, ground coriander, salt, black pepper, curry powder, cinnamon, egg, panko breadcrumbs, and all-purpose flour. Mix until well combined to form the patty mixture.
- Form and Fry Patties: Heat 1 tablespoon of oil in a sauté pan over medium heat. Scoop approximately ¼ cup of the sweet potato mixture into the pan, flattening it gently to form a patty. Repeat with remaining mixture, working in batches if necessary.
- Cook the Patties: Cook the patties until golden brown on one side, about 3-4 minutes. Flip the patties carefully, adding more oil if the pan appears dry. Cook the other side until golden brown and cooked through. Remove from heat.
- Serve: Repeat the frying process with any remaining patties. Serve the warm sweet potato patties immediately as a snack or side dish.
Notes
- Ensure sweet potatoes are fully cooked and mashed smoothly for the best patty texture.
- Adjust seasoning to taste, especially the jalapeno, if you prefer more or less heat.
- Use a non-stick skillet for easier frying and flipping of patties.
- These patties can be kept warm in a low oven while cooking the rest.
- Can be served with chutney, yogurt sauce, or a sprinkle of fresh cilantro.
