  • Total Time: 4 hours 40 minutes (includes marinating time)
  • Yield: 4 servings

Ingredients

For the Marinade and Wings

  • 2 lbs Chicken Wings
  • 2 cups Low Sodium Soy Sauce
  • 2 tbsp Brown Sugar
  • 1 tbsp Black Garlic Sauce (or garlic paste)
  • 1 tbsp Ginger Paste
  • 2 tsp Garlic Powder
  • 2 tsp Smoked Paprika
  • 1 tsp Black Pepper
  • Kosher Salt (to taste)

For the Sweet Pineapple BBQ Sauce

  • 1 cup Ketchup
  • ⅛ cup Pineapple Juice
  • 2 tbsp Sriracha Sauce
  • 2 tbsp Honey
  • 1.5 tbsp Dijon Mustard
  • 1.5 tbsp Rice Wine Vinegar
  • 2 tsp Black Garlic Sauce

For Garnish

  • Chopped Parsley
  • Sriracha Sauce
  • Sesame Seeds

Instructions

  1. Marinate the Wings: In a food-safe bowl or container, combine the chicken wings with soy sauce, brown sugar, black garlic sauce, ginger paste, garlic powder, smoked paprika, black pepper, and kosher salt. Mix thoroughly so all wings are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight, to let the flavors penetrate.
  2. Preheat the Grill: Prepare your grill for medium-high heat, aiming for around 350°F. Set it up for direct grilling to get a nice char and smoky flavor.
  3. Grill the Wings: Remove wings from the marinade, discarding any excess liquid. Place the wings inside a rotisserie basket and seal it securely. Position the basket about 6-8 inches from the heat source on the grill. Cook until the internal temperature of the wings reaches 175°F, approximately 20-25 minutes, turning occasionally if necessary. Remove the wings and let them rest for 2-3 minutes.
  4. Prepare the Sweet Pineapple BBQ Sauce (Optional): While the wings are grilling, heat a basting skillet over the grill flames. Add ketchup, pineapple juice, sriracha sauce, honey, Dijon mustard, rice wine vinegar, and black garlic sauce. Simmer the mixture for about 20 minutes until it thickens and the flavors meld well. Remove from heat and set aside.
  5. Toss Wings in Sauce and Garnish: Once the wings have rested, toss them in the prepared sweet pineapple BBQ sauce to coat evenly. Garnish with sesame seeds, additional sriracha sauce, and chopped parsley for an added burst of flavor and color.
  6. Serve and Enjoy: Transfer the wings to a serving platter and enjoy immediately while warm and juicy.

Notes

  • Marinating the wings overnight intensifies the flavor but a minimum of 4 hours is sufficient.
  • Using a rotisserie basket helps cook the wings evenly without sticking to the grill grates.
  • Adjust the amount of sriracha in the sauce to control the heat level to your preference.
  • Ensure the wings reach an internal temperature of 175°F for safe consumption and optimal tenderness.
  • The sweet pineapple BBQ sauce can be prepared ahead of time and refrigerated.
