Carrots
- 1 lb. carrots, washed & peeled (or unpeeled)
Glaze & Seasoning
- 1 Tbsp avocado oil (or olive oil)
- 2 Tbsp balsamic vinegar (divided)
- 2 Tbsp honey (divided)
- 2 garlic cloves, minced
- 1 tsp dried thyme
- ¼ tsp salt
- Cracked black pepper, to taste
Topping (Optional)
- ¼ cup goat cheese, crumbled
Instructions
- Preheat oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
- Prepare carrots: Slice off both ends of the carrots. Then cut the carrots diagonally on the bias into approximately 1½ inch pieces. If the pieces are too large, slice them lengthwise again to ensure even roasting. Place all cut carrots into a large mixing bowl.
- Make glaze and coat carrots: In a small bowl or whisk, combine 1 tablespoon balsamic vinegar, 1 tablespoon honey, and your chosen oil. Pour this mixture over the carrots. Add minced garlic, dried thyme, salt, and cracked black pepper to taste. Toss everything thoroughly until the carrots are evenly coated with the glaze and seasonings.
- Arrange carrots on baking sheet: Using a slotted spoon, transfer the carrots from the bowl to your prepared baking sheet, spreading them out in a single layer for even roasting. Keep the remaining glaze liquid in the bowl to brush over the carrots later.
- Roast the carrots: Place the baking sheet in the oven and roast for 20 to 25 minutes until the carrots are tender. About 5 to 10 minutes before they finish roasting, brush the reserved glaze liquid over the carrots to enhance flavor and caramelization.
- Prepare finishing glaze: While the carrots finish roasting, whisk together the remaining 1 tablespoon balsamic vinegar and 1 tablespoon honey to make a fresh drizzle sauce.
- Dress and season carrots: Once roasted, remove the carrots and drizzle the fresh honey balsamic mixture over them. Taste and add extra salt or pepper if desired. Toss the carrots gently to evenly coat with the finishing glaze.
- Serve: Serve the roasted carrots immediately. Optionally, sprinkle crumbled goat cheese on top for added creaminess and flavor before serving.
Notes
- You can leave the carrots unpeeled if you prefer more texture and nutrients.
- Avocado oil or olive oil work equally well; choose based on your preference or what you have on hand.
- Adjust honey and balsamic vinegar amounts for sweeter or more tangy flavor according to taste.
- For extra flavor, fresh thyme can substitute dried thyme, but dried works well for roasting.
- You can easily double the recipe for larger gatherings—just spread the carrots on multiple baking sheets for even cooking.
- If you want a vegan version, omit the goat cheese or use a plant-based cheese alternative.
