Ingredients

1 large egg yolk

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

1/2 teaspoon Worcestershire sauce

1/4 cup extra virgin olive oil

1/4 cup vegetable oil

2 tablespoons grated Parmesan cheese

Salt to taste

Black pepper to taste

Instructions

  1. In a medium bowl, whisk together egg yolk, lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce until smooth.
  2. Slowly drizzle in olive oil and vegetable oil while whisking continuously to form a creamy emulsion.
  3. Stir in Parmesan cheese.
  4. Season with salt and freshly ground black pepper to taste.
  5. Taste and adjust seasonings if needed.
  6. Use immediately or refrigerate in an airtight container for up to 3 days.
