Crust
- 1 (8-oz.) can crescent rolls
Filling
- 1 lb. lean turkey breakfast sausage
- 4 large eggs
- 3/4 cup egg whites (180g) (or 4 extra eggs)
- 1.25 cup milk of choice (300g)
- 1 Tbsp ranch seasoning mix (or 1 tsp each: salt, garlic, onion powder)
- 1/4 tsp black pepper
- 1/2 cup shredded low fat sharp cheddar cheese (56g)
- 1/2 cup shredded Monterey Jack cheese (56g)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Spray a 9×13-inch baking dish thoroughly with nonstick spray to prevent sticking.
- Prepare Crescent Roll Crust: Open the can of crescent rolls and arrange the dough along the bottom and partially up the sides of the prepared baking dish. Press down gently to spread it out evenly and try to seal the seams as best as possible to form a solid crust. Bake the crust for 5 minutes to set it.
- Cook Sausage: While the crust bakes, heat a large skillet over medium heat. Add the lean turkey breakfast sausage and cook, breaking it up with a spoon, until it is browned and no longer pink, about 7-10 minutes.
- Mix Egg Mixture: In a large mixing bowl, whisk together the 4 large eggs and 3/4 cup of egg whites until combined. Add the milk, ranch seasoning mix (or the individual spices: salt, garlic powder, and onion powder), and black pepper. Whisk until smooth and well incorporated.
- Assemble Casserole: Spread the cooked sausage evenly over the pre-baked crescent roll crust. Then, sprinkle half of each shredded cheese variety—sharp cheddar and Monterey Jack—over the sausage layer. Pour the egg mixture evenly over the casserole. Finally, sprinkle the remaining shredded cheeses on top.
- Bake the Casserole: Place the assembled casserole into the oven and bake for about 35 minutes, or until a toothpick inserted in the center comes out clean and the eggs are fully set and slightly golden on top.
- Serve: Remove from oven and let cool slightly. Serve with optional condiments such as hot sauce, ketchup, or mustard as desired. Enjoy your delicious holiday breakfast casserole!
