Ingredients

1 teaspoon extra-virgin olive oil

¼ cup chopped white onion

2 (10-ounce) boxes frozen chopped spinach, thawed and drained

1 cup unsalted low-fat cottage cheese

½ cup crumbled feta cheese

½ cup shredded Monterey Jack cheese

2 large eggs, lightly beaten

1 teaspoon garlic powder

1 teaspoon lemon juice

⅛ teaspoon salt

2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a small skillet over medium heat. Add onion and cook until softened, about 2 minutes.
  3. In a 2-quart casserole dish, combine spinach, cooked onion, cottage cheese, feta, Monterey Jack, eggs, garlic powder, lemon juice, and salt. Mix well.
  4. Sprinkle Parmesan cheese evenly over the top.
  5. Bake for 40–45 minutes, until bubbling and golden. Let stand for 10 minutes before serving.
