1 teaspoon extra-virgin olive oil
¼ cup chopped white onion
2 (10-ounce) boxes frozen chopped spinach, thawed and drained
1 cup unsalted low-fat cottage cheese
½ cup crumbled feta cheese
½ cup shredded Monterey Jack cheese
2 large eggs, lightly beaten
1 teaspoon garlic powder
1 teaspoon lemon juice
⅛ teaspoon salt
2 tablespoons grated Parmesan cheese
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a small skillet over medium heat. Add onion and cook until softened, about 2 minutes.
- In a 2-quart casserole dish, combine spinach, cooked onion, cottage cheese, feta, Monterey Jack, eggs, garlic powder, lemon juice, and salt. Mix well.
- Sprinkle Parmesan cheese evenly over the top.
- Bake for 40–45 minutes, until bubbling and golden. Let stand for 10 minutes before serving.
Notes
- For extra creaminess, blend the cottage cheese before mixing.
- Swap Monterey Jack for mozzarella or sharp Cheddar for a flavor change.
- Add red pepper flakes for a spicy kick.
- Mix in kale or Swiss chard for a greens variation.
- Thoroughly squeeze out excess liquid from spinach to prevent watery dip.
