Ingredients
2 lbs ground beef (80/20)
1 cup bread crumbs
1 cup grated Parmesan cheese, plus extra for topping
2 large eggs
1 small onion, finely chopped
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh oregano, chopped
2 tsp salt
1 tsp black pepper
2 tbsp Worcestershire sauce
1/2 cup milk
1/2 cup ketchup, plus 2 tbsp for topping
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, bread crumbs, Parmesan cheese, eggs, onion, garlic, parsley, thyme, oregano, salt, pepper, Worcestershire sauce, and milk. Mix until evenly blended, but do not overmix.
- Shape mixture into a loaf and place in a greased baking pan or on a lined baking sheet for a crustier finish.
- Spread 2 tablespoons of ketchup over the top and sprinkle with extra Parmesan cheese.
- Bake uncovered for 1 hour, or until the internal temperature reaches 160°F (70°C).
- Remove from oven and let rest for 10 minutes before slicing and serving.
Notes
- Swap half the beef for turkey for a lighter version.
- Use gluten-free bread crumbs if needed.
- Add grated zucchini or carrots to sneak in vegetables.
- Prepare the mixture the night before and bake the next day.
- Double the recipe to bake one and freeze one.
