Sweet Potatoes
- 4 medium sweet potatoes

Instructions
- Preheat Oven: Preheat your oven to 425°F and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Prep Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly, then pat dry with a paper towel. Place each potato on chopsticks or similar supports and carefully make a series of 1/8-inch slices along the potato lengthwise, stopping about ½ inch from the bottom so the potato holds together.
- Initial Baking: Spread 1 tablespoon of butter spread evenly over the potatoes, ensuring some gets between the slices. Place the potatoes on the prepared baking sheet and bake for about 30 minutes until the centers begin to soften but are not fully tender.
- Butter and Season: Remove the potatoes from the oven. Rub the remaining tablespoon of butter spread all over the potatoes, making sure to get the butter in between the slices. Sprinkle fresh thyme on top, then gently fan the slices apart with a fork to separate them. This step helps crisp the edges during final baking.
- Finish Baking: Return the potatoes to the oven and bake for an additional 20-30 minutes until the potatoes are tender inside and the edges are crispy and golden brown.
- Prepare Dip: While the potatoes bake, mix the non-fat Greek yogurt, diced avocado, chopped scallion, and a pinch of salt and pepper in a bowl to create a creamy dip that complements the sweet potatoes.
- Serve: Serve the crispy hasselback sweet potatoes warm with the yogurt avocado scallion dip on the side for a delicious and healthy accompaniment.
