Ingredients
Cookie Dough
- 15.25 ounce box vanilla cake mix (dry mix)
- 1/2 cup butter, softened
- 2 large eggs
- 1 Tablespoon oil
- Green food coloring, as needed
Coating
- 1/2 cup powdered sugar
- 1/2 cup cornstarch
Topping
- Heart sprinkles or red hot candies
Instructions
- Preheat and prepare: Preheat your oven to 350°F (175°C). Line a cookie sheet with parchment paper to prevent sticking and ensure even baking.
- Mix ingredients: In a large mixing bowl, combine the vanilla cake mix, softened butter, eggs, and oil. Stir until the mixture is well combined and forms a dough. Add green food coloring gradually until you reach your desired vibrant green shade.
- Mix sugar and cornstarch: In a separate small bowl, mix together the powdered sugar and cornstarch. This mixture will be used to coat the cookie dough and create a snowy white crackled effect on the cookies.
- Roll in sugar: Using a medium cookie scoop, portion the dough into balls. Roll each dough ball twice in the powdered sugar and cornstarch mixture to ensure they are fully coated, which helps create the classic crackled surface after baking. Place the coated dough balls spaced evenly on the parchment-lined cookie sheet.
- Add heart: Press a heart sprinkle or a red hot candy gently onto the top center of each dough ball to decorate and add a festive touch resembling the Grinch’s heart.
- Bake: Bake the cookies in the preheated oven for 8-10 minutes. Bake just until the centers have set and the cookies do not brown to keep them soft and chewy. Avoid overbaking.
- Cool: Remove the cookies from the oven and allow them to sit on the cookie sheet for 2 minutes to set. Then transfer them to a wire rack to cool completely before serving or storing.
Notes
- Do not overbake to maintain the soft and chewy texture.
- If you prefer a brighter green, add food coloring gradually and mix well each time.
- You can omit the cornstarch in the powdered sugar coating, but the cookies won’t have the same bright white crackled finish.
- Use parchment paper for easy cleanup and to prevent cookies from sticking.
- Store cookies in an airtight container at room temperature for up to 3 days to keep them fresh.
