- 1 pound (16 oz) macaroni pasta

- ⅓ cup butter
- ⅓ cup all-purpose flour
- 2 cups milk
- ½ cup half and half
- 8 oz smoked Gouda cheese, shredded
- 4 oz Cheddar cheese, shredded
- ¼ tsp salt
- ½ tsp pepper
- 1 tsp dried oregano
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the macaroni pasta until al dente according to package instructions. Drain well and set aside.
- Make the Roux: In a large non-stick pan over medium heat, melt the butter. Add the all-purpose flour and stir constantly to form a roux. Cook for 2-3 minutes until the roux is smooth and has a light brown color, which helps eliminate the raw flour taste.
- Prepare the Cheese Sauce: Gradually whisk in the milk and half and half, stirring continuously to keep the mixture smooth. Slowly add the shredded smoked Gouda and Cheddar cheeses. Continue whisking until the cheeses fully melt and create a smooth, creamy sauce. Season with salt, pepper, and dried oregano.
- Simmer the Sauce: Bring the sauce to a gentle simmer and cook for 1-3 minutes until it thickens enough to coat the back of a spoon. Stir frequently to avoid burning or curdling.
- Combine Pasta and Sauce: Reduce the heat to low, then add the cooked and drained macaroni to the cheese sauce. Stir well to evenly coat all the pasta.
