Instructions

  1. Add sugar to pot: Pour the white granulated sugar into a stainless steel pot and place it over medium heat to begin melting.
  2. Stir until melted: Using a rubber spatula or wooden spoon, stir constantly as the sugar starts melting. It will first clump together then gradually dissolve into an amber-colored liquid resembling maple syrup. Be sure to scrape down the sides and bottom of the pot continuously to prevent sticking.
  3. Add butter: When the sugar has completely melted with no lumps remaining, add the cubed room temperature unsalted butter. The mixture will bubble and splatter, so protect your hands with an oven mitt or sleeve.
  4. Whisk: Stir continuously until the butter is fully melted and incorporated. If the mixture separates, remove from heat and vigorously whisk until smooth.
  5. Add cream: Reduce heat to low and slowly add the room temperature heavy whipping cream while stirring constantly. Once combined, stop stirring and allow the sauce to boil gently for 1 minute.
  6. Add vanilla and salt: Remove the pot from the heat and stir in the vanilla extract and salt. At this point, the sauce will be thin.
