Instructions
- Heat the Sugar: Add the white granulated sugar to a stainless steel pot and place it over medium heat. Stainless steel is preferred to avoid reaction and ensure even melting.
- Melt the Sugar: Stir constantly with a rubber spatula or wooden spoon. Initially, the sugar will clump before gradually melting into a smooth amber liquid resembling maple syrup. Scrape the sides and bottom of the pot frequently to prevent burning.
- Add the Butter: Once the sugar is completely melted with no clumps, add the room temperature, cubed unsalted butter. The mixture will bubble and may splatter; protect your hands during this step.
- Blend Butter into Sugar: Stir consistently until the butter is fully melted and incorporated. If the mixture starts to separate, remove from heat and whisk vigorously to combine.
- Add Heavy Cream: Lower the heat to low and slowly stir in the room temperature heavy whipping cream. Continue stirring until mixed, then allow the mixture to boil gently for 1 minute without stirring.
- Finish with Vanilla and Salt: Remove the pot from heat and stir in the vanilla extract and salt thoroughly. The sauce will be thin at this point.
- Cool and Thicken: Let the caramel sauce sit at room temperature for 30 minutes to 1 hour to thicken before serving. Enjoy your perfectly smooth, gluten free caramel sauce!
