Fresh ginger tea is a soothing, invigorating drink that’s perfect for any time of day. Made with just a few simple ingredients, it’s caffeine-free, naturally vegan, and great for digestion or calming an upset stomach.

Ingredients

1-inch chunk of fresh ginger (no need to peel), sliced thinly

1 cup water

Optional: 1 cinnamon stick, 1-inch piece fresh turmeric (sliced), or several sprigs of fresh mint

Optional for serving: lemon or orange slice, 1 tsp honey or maple syrup

Instructions

  1. In a small saucepan, combine sliced ginger and water. Add optional cinnamon, turmeric, or mint if using.
  2. Bring to a simmer over high heat, then reduce heat and simmer gently for 5 to 10 minutes, depending on desired strength.
  3. Remove from heat and strain the tea into a mug.
  4. Serve hot, optionally adding a slice of lemon or orange and sweeten with honey or maple syrup to taste.

Notes

  • Make it vegan by using maple syrup instead of honey.
  • To prepare ahead, multiply ingredients and refrigerate leftover tea for up to 4 days. Reheat or serve chilled.
