Ingredients
3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (about 6 cloves)
2 tablespoons minced fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Cut potatoes in half or quarters and place in a large bowl.
- Toss with olive oil, salt, pepper, and garlic until evenly coated.
- Spread potatoes in a single layer on a sheet pan.
- Roast for 45 minutes to 1 hour, flipping twice with a spatula, until browned and crisp.
- Remove from oven, toss with fresh parsley, adjust seasoning if needed, and serve hot.
Notes
- Add Parmesan cheese during the last 10 minutes of roasting for extra flavor.
- Sprinkle with smoked paprika or chili flakes for a spicy kick.
- Swap parsley for rosemary or thyme for earthy flavor.
- Toss with lemon zest before serving for brightness.
- For extra crispiness, avoid overcrowding the baking sheet.
