Ingredients
Fish and Vegetables
- 1 1/2 pounds halibut fillets
- 1 pound asparagus, cleaned and trimmed (optional)
Sauce
- 4 tablespoons butter, melted
- 2 large garlic cloves, sliced or minced
- 1 tablespoon fresh dill, plus more for serving
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Preheat and Prepare: Preheat your oven to 400 degrees Fahrenheit. Pat the halibut fillets dry thoroughly with paper towels to ensure they bake evenly. Arrange the fillets on a foil-covered baking sheet. Spread the cleaned and trimmed asparagus (or fresh green beans if preferred) evenly around the fish.
- Make the Garlic Herb Butter Sauce: In a microwave-safe bowl, combine the butter and sliced garlic. Microwave for 30 to 45 seconds until the butter is melted and the garlic is infused. Stir in the Dijon mustard, fresh lemon juice, kosher salt, black pepper, and fresh dill until all ingredients are well combined. Pour this flavorful butter herb sauce evenly over the halibut fillets and the surrounding vegetables.
- Bake the Halibut: Place the baking sheet in the preheated oven and bake for 12 to 14 minutes, or until the fish is cooked through and flakes easily with a fork. The internal temperature should reach about 140°F for perfectly cooked halibut.
- Garnish and Serve: Remove from the oven and garnish with additional fresh dill and lemon wedges to enhance the bright, fresh flavors. Serve immediately for the best taste and texture.
Notes
- Ensure the halibut is dried well before baking to achieve a better texture.
- Asparagus is optional but adds a crisp, fresh vegetable component to the dish.
- Use fresh herbs for the best flavor, but dried dill can be substituted in a pinch (use about 1 teaspoon dried).
- Cooking times may vary slightly depending on the thickness of your halibut fillets.
- To avoid overcooking, check the fish a minute or two before the end of the baking time.
