Ingredients

Shrimp and Sauce

  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4-5 large garlic cloves, minced (or 1 1/2 tablespoons minced garlic)
  • 1 1/4 pounds large shrimp (prawns), shelled with tails on or off
  • 1 pinch salt, to taste
  • 1 pinch cracked black pepper, to taste
  • 1/4 cup dry white wine (or broth)
  • 1/2 teaspoon red pepper flakes, crushed (optional, to taste)
  • 2 tablespoons lemon juice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat and Sauté Garlic: In a large pan or skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 30 seconds to 1 minute until fragrant, being careful not to let it burn.
  2. Cook the Shrimp: Add the shrimp to the pan, seasoning with salt and cracked black pepper to taste. Sauté the shrimp for 1-2 minutes on one side until they begin to turn pink, then flip them over.
  3. Add Wine and Simmer: Pour in the dry white wine (or broth) and add the red pepper flakes if using. Bring the mixture to a simmer and cook for another 1-2 minutes until the wine reduces by about half and the shrimp are cooked through. Avoid overcooking the shrimp to maintain tenderness.
  4. Finish the Sauce: Stir in the remaining 2 tablespoons of butter, lemon juice, and chopped parsley. Remove the pan from heat immediately to prevent overcooking and to keep the sauce rich and glossy.
  5. Serve: Serve the garlic butter shrimp scampi over your choice of rice, pasta, garlic bread, or steamed vegetables like cauliflower, broccoli, or zucchini noodles for a complete meal.
