Ingredients
Chicken
- 1 1/4 lbs boneless skinless chicken breasts, cut into 1 1/4-inch pieces
- 2 Tbsp all-purpose flour
- 1 1/2 tsp Italian seasoning
- Salt and freshly ground black pepper (about 3/4 tsp salt and 1/2 tsp pepper)
Cooking
- 1 Tbsp olive oil
- 3 Tbsp unsalted butter, divided
- 1 1/2 Tbsp minced fresh garlic (about 4 cloves)
- 2 Tbsp finely chopped fresh parsley
Instructions
- Preheat the skillet: Heat a 12-inch non-stick skillet over medium-high heat to prepare for cooking the chicken evenly.
- Prepare the chicken: Pat the chicken pieces dry on all sides using paper towels to ensure they brown properly during cooking.
- Coat the chicken: Sprinkle flour, Italian seasoning, salt, and pepper over the chicken. Toss thoroughly until the flour evenly coats each piece without any remaining on the cutting board.
- Heat oil and butter: Add 1 tablespoon olive oil and 1 tablespoon butter to the hot skillet. Allow the butter to melt quickly, then tilt the pan to evenly coat the surface.
- Cook the chicken: Place the chicken pieces in the skillet in a single layer with space between each piece to prevent steaming. Let them cook undisturbed for about 3 minutes until the bottom is golden brown.
- Flip and continue cooking: Turn the chicken pieces over and cook for an additional 2 minutes until the chicken is nearly cooked through.
- Add garlic, butter, and parsley: Add the remaining 2 tablespoons butter in small pieces, minced garlic, and chopped parsley to the skillet. Cook for 1 more minute, ensuring the chicken reaches an internal temperature of 165°F and is no longer pink inside.
- Serve immediately: Remove from heat and serve the garlic butter chicken bites right away for maximum flavor and juiciness.
Notes
- Use a meat thermometer to check that the internal temperature of the chicken reaches 165°F for safety.
- Drying the chicken before coating ensures even browning and prevents steaming.
- The Italian seasoning can be substituted with a mix of dried oregano, basil, and thyme.
- Serve with fresh bread, over rice, or alongside steamed vegetables for a complete meal.
- Leftovers can be refrigerated for up to 3 days and gently reheated in a skillet.
