Garlic Butter Chicken Bites are quick, flavorful, and tender pieces of chicken breast sautéed in a rich garlic butter sauce with fresh herbs. Perfect for a fast and delicious weeknight meal, these chicken bites are golden brown and packed with savory Italian seasoning and fresh parsley.

  • Total Time: 15 minutes
  • Yield: 3 servings

Ingredients

Chicken

  • 1 1/4 lbs boneless skinless chicken breasts, cut into 1 1/4-inch pieces
  • 2 Tbsp all-purpose flour
  • 1 1/2 tsp Italian seasoning
  • Salt and freshly ground black pepper (about 3/4 tsp salt and 1/2 tsp pepper)

Cooking

  • 1 Tbsp olive oil
  • 3 Tbsp unsalted butter, divided
  • 1 1/2 Tbsp minced fresh garlic (about 4 cloves)
  • 2 Tbsp finely chopped fresh parsley

Instructions

  1. Preheat the skillet: Heat a 12-inch non-stick skillet over medium-high heat to prepare for cooking the chicken evenly.
  2. Prepare the chicken: Pat the chicken pieces dry on all sides using paper towels to ensure they brown properly during cooking.
  3. Coat the chicken: Sprinkle flour, Italian seasoning, salt, and pepper over the chicken. Toss thoroughly until the flour evenly coats each piece without any remaining on the cutting board.
  4. Heat oil and butter: Add 1 tablespoon olive oil and 1 tablespoon butter to the hot skillet. Allow the butter to melt quickly, then tilt the pan to evenly coat the surface.
  5. Cook the chicken: Place the chicken pieces in the skillet in a single layer with space between each piece to prevent steaming. Let them cook undisturbed for about 3 minutes until the bottom is golden brown.
  6. Flip and continue cooking: Turn the chicken pieces over and cook for an additional 2 minutes until the chicken is nearly cooked through.
  7. Add garlic, butter, and parsley: Add the remaining 2 tablespoons butter in small pieces, minced garlic, and chopped parsley to the skillet. Cook for 1 more minute, ensuring the chicken reaches an internal temperature of 165°F and is no longer pink inside.
  8. Serve immediately: Remove from heat and serve the garlic butter chicken bites right away for maximum flavor and juiciness.

Notes

  • Use a meat thermometer to check that the internal temperature of the chicken reaches 165°F for safety.
  • Drying the chicken before coating ensures even browning and prevents steaming.
  • The Italian seasoning can be substituted with a mix of dried oregano, basil, and thyme.
  • Serve with fresh bread, over rice, or alongside steamed vegetables for a complete meal.
  • Leftovers can be refrigerated for up to 3 days and gently reheated in a skillet.
