Ingredients
For the Mantou Dough:
- 340g plain flour
- 50g granulated sugar
- 1/4 teaspoon salt
- 6g instant yeast
- 220ml whole milk, warm (heated for 30 seconds in microwave)

- Vegetable oil or any flavorless oil for frying
- Condensed milk for serving
Instructions
- Making the dough: In a large bowl, combine the plain flour, granulated sugar, salt, instant yeast, and warm whole milk. Mix until a dough forms, then knead the dough for approximately 8 minutes until it is smooth and slightly sticky.
- Shaping the dough: On a lightly floured surface, roll out the dough into a large rectangle about 25cm by 40cm in size. Starting from the short side, roll the dough tightly into a log and cut this log into 4cm thick pieces.
- Proofing the dough pieces: Place the dough pieces into a steamer basket, cover with the lid, and leave them in a warm place to rise for 1 hour. After rising, the buns should appear puffier and feel soft when gently pressed.
- Steaming the buns: Steam the dough pieces for 8 to 10 minutes. Once done, carefully open the steamer lid slightly and let the buns rest for 2 minutes before fully removing the lid to prevent collapse.
- Frying the buns: Heat vegetable oil in a pan to 180°C (350°F). Fry the steamed buns until they turn golden brown on both sides, ensuring a crispy exterior while keeping the inside soft.
- Serving: Serve the fried mantou hot with condensed milk on the side for dipping. Enjoy the combination of crispy texture and sweet, creamy flavor.
Notes
- Use warm milk to activate the yeast effectively.
- Don’t open the steamer lid immediately after steaming to avoid buns shrinking.
- Ensure oil is hot enough to get a crispy exterior but avoid burning the buns.
- Can be served as a dessert or snack.
- Adjust sugar amount for a less sweet version.
