Palmiers, also known as French heart-shaped cookies, are flaky, caramelized treats made from just puff pastry and sugar. Perfectly crisp and buttery, these elegant pastries are incredibly easy to prepare and bake in just 10 minutes.

Ingredients

3/4 cup sugar

1 puff pastry sheet

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Place the puff pastry on a floured surface. Sprinkle it generously with sugar and press it in with a rolling pin.
  3. Fold both long sides of the pastry toward the center. Then fold each side again to the center, and finally fold in half, forming a log.
  4. Cut the log into 1/4-inch slices. Place the slices cut-side down on a baking sheet lined with parchment paper.
  5. Bake for 6 minutes. Flip the cookies and bake for another 5 minutes or until golden brown and caramelized.
  6. Let cool on a rack and enjoy!

Notes

  • Use cold puff pastry to maintain flakiness. If using frozen dough, thaw just until pliable—about 30 minutes.
  • For best texture, use coarse sugar like demerara and be generous with it.
  • You can freeze unbaked palmiers in a single layer, then store in a bag. Bake from frozen, adding a minute or two to the baking time.
