Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for toasting and baking the English muffin pizzas.
- Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and crispy, breaking it into small crumbles as it cooks. Remove from skillet and set aside.
- Toast Muffins: Arrange the English muffin halves cut side up on a baking sheet and toast in the oven for 3-4 minutes until lightly crisped.
- Assemble Pizzas: Spread a thin layer of tomato sauce over each toasted muffin half, sprinkle with dried oregano, then evenly top with shredded mozzarella cheese and the cooked sausage, leaving a space in the center for the egg.
- Bake: Return the assembled muffins to the oven and bake for 8-10 minutes until the cheese is melted and bubbly.
- Fry the Eggs: While the muffins bake, heat olive oil or butter in a skillet over medium heat. Fry the eggs until the whites are fully set but yolks remain runny.
- Top and Serve: Place a fried egg on each baked muffin pizza. Season with salt and black pepper to taste and serve immediately while warm.
