Ingredients
Cookies
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup Eggnog
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
Eggnog Frosting
- 1/4 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/3 cup Eggnog
- 1/2 tsp vanilla extract
Topping
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
Instructions
- Preheat the Oven: Set your oven to 350ºF (177ºC) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Cream Butter and Sugars: In a large mixing bowl or stand mixer, beat together the softened butter, sugar, and brown sugar until the mixture is light and fluffy, providing a creamy base for the dough.
- Add Wet Ingredients: Incorporate the egg, vanilla extract, and eggnog into the creamed butter mixture, mixing thoroughly until well combined and creamy.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, ground cinnamon, and ground nutmeg to evenly distribute the spices and leavening agent.
- Mix Dough: Gradually add the dry ingredient mixture to the wet ingredients, mixing until a soft, cohesive dough forms, ready to be shaped into cookies.
- Shape Cookies: Using a cookie scoop or spoon, place dollops of dough onto the prepared baking sheet. Press each cookie gently with the back of a drinking glass to flatten them to about 1/4 inch thickness. Lightly grease the glass if sticking occurs.
- Bake: Bake the cookies in the preheated oven for 8-10 minutes until the edges turn golden brown and the centers are set but still soft.
- Cool: Transfer the cookies to a cooling rack and allow them to cool completely before frosting to prevent melting the frosting.
- Prepare Eggnog Frosting: In a bowl, beat together softened butter, powdered sugar, eggnog, and vanilla extract with an electric mixer until a smooth, spreadable frosting forms.
- Frost Cookies: Spread the eggnog frosting evenly over the cooled cookies.
- Add Spiced Topping: Mix the nutmeg and cinnamon for the topping and sprinkle this mixture evenly over the frosted cookies to enhance flavor and add a festive touch.
Notes
- For a stronger eggnog flavor, use rich, high-quality eggnog or make your own homemade version.
- Pressing the cookies with a glass helps them bake evenly and maintain a uniform thickness.
- If the frosting is too stiff, add a little more eggnog, one teaspoon at a time, to reach desired consistency.
- Store cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
- Make sure cookies are fully cooled before frosting to avoid melting the frosting.
