Ingredients

Eggs

  • 2 hard boiled eggs

Spice Mixture and Oil

  • 2 tablespoons oil
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon garam masala powder
  • a pinch pepper powder
  • salt to taste

Instructions

  1. Boil Eggs: Cook the eggs in boiling water for exactly 14 minutes. Once done, switch off the heat and transfer the eggs to chilled water. Let them sit for a few minutes to cool, then peel off the shells carefully.
  2. Slice Eggs: Place the peeled eggs on a chopping board and slice each egg into halves with the yolk side up, preparing them for frying.
  3. Heat Oil and Spices: Pour 2 tablespoons of oil into a pan or dosa tawa and heat it on the lowest flame so the oil is hot but not smoking. Add turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder, and salt to taste. Stir quickly to combine without burning the spices.
  4. Fry Eggs: Place the sliced eggs in the pan with the yolk side down and cook for about a minute. Carefully flip the eggs to the other side to cook briefly for even flavor.
  5. Finish with Pepper and Serve: Drizzle the spiced oil over the eggs and sprinkle a pinch of pepper powder. The spiced fried eggs are now ready to be served, ideally with rice and dal for a complete meal.
