  1. Prepare Strawberries: Rinse the strawberries thoroughly and remove the calyces (the green tops). Slice the strawberries into halves or quarters if they are large to ensure even cooking.
  2. Combine Ingredients: Place the prepared strawberries in a small pan and add the sugar and lemon juice. If you prefer less sweetness, start by adding half the sugar and adjust later after tasting.
  3. Simmer Mixture: Bring the mixture to a gentle simmer over medium-low heat, stirring occasionally to dissolve the sugar and evenly heat the fruit.
  4. Cook for Sauce or Compote: Reduce the heat to low and simmer for 10 minutes. For the strawberry sauce (coulis), proceed after 10 minutes. For a thicker compote, continue simmering up to 20 minutes total.
  5. Strain for Sauce: To make the strawberry sauce, remove the pan from heat and let it cool for 5 minutes. Optionally, mash the strawberries with a potato masher to release more flavor, then strain the mixture using a heatproof sieve or strainer. Press down with the back of a spoon to extract as much liquid as possible, yielding a smooth sauce.
  6. Finish Compote: For the strawberry compote, once the 10 to 20 minutes of simmering is complete, the mixture is ready. It will have a chunky texture with softened strawberries, perfect for spooning over desserts.
