- 350 g Sausagemeat (preferably seasoned or plain pork sausage meat)
- 320 g Rolled sheet of puff pastry
- 1 Egg (beaten, for brushing)

- 1 tsp Dried sage
- 1 tsp Dried thyme
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 220℃/425°F fan, 240℃/475°F conventional, or Gas Mark 9 to ensure it’s hot enough for a crisp, golden bake.
- Prepare Sausagemeat: In a bowl, combine the sausagemeat with dried sage, dried thyme, salt, and freshly ground black pepper. Mix thoroughly using a fork to evenly distribute the seasonings.
- Prepare Puff Pastry: Roll out the sheet of puff pastry if not already flat, then cut it lengthwise down the middle to form two long strips.
- Shape Sausage Filling: On each pastry strip, place half of the seasoned sausagemeat in a long sausage-like shape along the middle. Using clean hands helps to shape it evenly and tightly.
- Brush Edges with Egg: Brush one long edge of each pastry strip with beaten egg to help seal the pastry when rolled.
- Roll Pastry: Carefully roll the pastry around the sausage filling, keeping it tight and firm. Seal the edge by pressing with a fork all along the join to ensure it stays closed during baking.
- Position & Egg Wash: Place the rolled sausage ‘sausages’ on a baking sheet lined with baking paper, with the join side down. Brush the tops generously with the remaining beaten egg for a glossy finish.
- Cut Into Portions: Cut each long roll into 8 equal pieces by halving, then halving again twice, for uniform sausage rolls.
- Optional Decoration: Prick the tops with a knife to create a pattern or allow steam to escape during baking, if desired.
- Bake: Bake in the preheated oven for about 20 minutes or until the sausage rolls are puffed up and golden brown.

- Sausagemeat can be plain or pre-seasoned; adding dried herbs enhances flavor.
- Use fresh and good-quality puff pastry for the best flaky texture.
