Ingredients
Spices and Seasonings
- 1 tbsp Indian curry spice
- 1 tsp curcuma (turmeric) powder
- Some lemon zest
- A pinch of salt
- Some dry herbs like oregano, basil, or dill (optional)
Vegetables and Aromatics
- 6 garlic cloves
- A piece of ginger (about 1 inch)
- 1 medium head of cauliflower
- Some fresh herbs of your choice (such as cilantro, parsley, or coriander)
Liquids and Fats
- 2 tbsp cold-pressed olive oil or coconut oil
- Juice of 1 lemon or mandarin
Instructions
- Preheat the oven: Set your oven temperature to 200°C (392°F) to get it ready for roasting the cauliflower.
- Prepare the cauliflower: Rinse the head of cauliflower under running water after removing the leaves. Pat it completely dry with a kitchen towel to remove all moisture.
- Cut the cauliflower: Break the cauliflower into florets, aiming for even sizes to ensure uniform cooking.
- Slice garlic and ginger: Cut the garlic cloves and ginger into slices that are not too thin to prevent burning during roasting.
- Make the spice mix: In a large bowl, combine the lemon zest, Indian curry spice, turmeric powder, cold-pressed olive or coconut oil, sliced ginger, dry herbs, and sliced garlic. Mix well to form a flavorful paste.
- Coat the cauliflower: Add the cauliflower florets into the bowl and toss thoroughly until all the florets are evenly coated with the spice and oil mixture.
- Prepare the baking tray: Lightly oil a baking tray using your fingers or a kitchen brush to prevent sticking.
- Arrange the florets: Spread the curried cauliflower florets evenly in a single layer on the baking tray, ensuring they are not crowded to roast properly.
- Roast the cauliflower: Place the tray in the preheated oven and roast for about 30 minutes, allowing the cauliflower to become tender and slightly golden.
- Finish and season: Remove the tray from the oven. Sprinkle the roasted cauliflower with salt, fresh herbs, and squeeze fresh lemon or mandarin juice over the top to brighten the flavors.
- Serve: Serve your easy roasted cauliflower curry warm as a side dish and enjoy its vibrant, aromatic taste.
- Share the joy: Thank you for sharing this recipe! Many blessings to you.
Notes
- If you prefer a stronger spicy kick, increase the amount of Indian curry spice slightly.
- Using fresh lemon or mandarin juice just before serving enhances the brightness and balances the roasted flavors.
- Optional dry herbs like oregano, basil, or dill can be adjusted or omitted based on personal taste preferences.
- For a vegan and gluten-free dish, ensure the curry spice blend does not contain any additives or gluten-containing ingredients.
- The garlic and ginger slices should be thick enough to avoid burning but thin enough to infuse their flavors during roasting.
