Ingredients
Pasta
- 12 ounces spaghetti (whole wheat or your favorite brand)
Sauce and Toppings
- 2 tablespoons olive oil
- 1 pound cremini mushrooms, sliced
- 4-6 garlic cloves, chopped
- Kosher salt, to taste
- Ground black pepper, to taste
- 1/2 cup grated Pecorino Romano cheese (plus more for serving)
- 2-3 tablespoons coarsely chopped fresh parsley leaves
Instructions
- Cook the Spaghetti: Bring a large pot of salted water to a boil and cook the 12 ounces of spaghetti according to the package instructions until al dente. Reserve 2/3 cup of the pasta water, then drain the spaghetti well.
- Sauté the Mushrooms: While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced cremini mushrooms and sauté for 5-7 minutes until they become tender and browned.
- Add Garlic and Season: Stir in the chopped garlic cloves and season with kosher salt and ground black pepper to taste. Cook for about 1 minute more until the garlic releases its fragrance but does not burn.
- Combine Pasta and Cheese: With the skillet still on medium heat, add the drained spaghetti, grated Pecorino Romano cheese, and the reserved pasta water to the mushrooms. Using tongs, toss everything thoroughly to create a creamy sauce that coats the pasta evenly.
- Finish and Serve: Stir in the chopped fresh parsley leaves for a touch of freshness. Serve immediately with extra Pecorino Romano cheese if desired. Enjoy your delicious mushroom garlic spaghetti!
Notes
- Use whole wheat or regular spaghetti based on preference for a healthier or classic option.
- Be sure to reserve some pasta water to help create a silky sauce that binds the cheese to the pasta.
- Adjust garlic quantity based on your taste for a milder or stronger garlic flavor.
- Fresh parsley adds color and a bright herbal note but can be omitted if unavailable.
- This recipe is vegetarian but not vegan due to the Pecorino Romano cheese.
- For extra protein, consider adding grilled chicken or sautéed tofu on the side.
