Instructions

- Incorporate remaining peas: Fold the remaining half of the defrosted peas into the batter to provide texture and bite to the fritters.
- Fry the fritters: Heat 2 tablespoons of olive oil in a frying pan over medium heat. Using a heaped soup spoon, drop spoonfuls of batter into the hot oil to form 8-10 fritters. Fry in batches, cooking each fritter until golden brown and crispy on both sides, usually about 3-4 minutes per side.
