Easy Egg-free Chocolate Salami, also known as Greek Kormos or Mosaiko, is a no-bake dessert featuring rich dark chocolate, crunchy cookies, and walnuts, shaped into a log and coated with powdered sugar. This classic Greek treat is simple to prepare, with a vegan option using plant-based butter and cookies. It requires no oven baking and is firmed up in the freezer, making it a perfect decadent yet easy dessert.

  • Total Time: 1 hour 5 minutes
  • Yield: 10 servings

Ingredients

Chocolate Mixture

  • 8.8 oz / 250 g dark chocolate (or bittersweet, semi-sweet, or baking chocolate), chopped
  • ½ cup (113 g) unsalted butter (or vegan butter)
  • 2 tablespoons milk of choice
  • 2 tablespoons cognac or brandy (optional)
  • a pinch of salt

Mix-ins

  • 7 oz / 200 g plain vanilla cookies (or vegan cookies), coarsely crushed
  • 2 oz / 56 g walnuts, coarsely chopped

Finishing

  • Powdered sugar (for coating)

Instructions

  1. Melt Chocolate and Butter: Place chopped chocolate and butter in a heatproof bowl over a pot of simmering water. Stir continuously until the mixture is completely melted and smooth.
  2. Combine Ingredients: Remove from heat and add crushed cookies, chopped walnuts, milk, cognac or brandy (if using), and a pinch of salt to the chocolate mixture. Mix thoroughly until all ingredients are well incorporated.
  3. Shape the Log: Lay out a sheet of plastic wrap and spread the chocolate mixture onto it. Shape the mixture into a log, then fold the plastic wrap over the mixture and roll it back and forth like candy to smooth and compact the shape. Tie the ends tightly.
  4. Freeze to Set: Place the wrapped log in the freezer for about 1 hour to firm up. Once set, the log will have a slightly flat bottom. Remove from freezer and roll it again to create a fully round shape.
  5. Coat and Decorate: Unwrap the chocolate salami and rub it evenly with powdered sugar to resemble the look of cured meat salami. For an authentic touch, optionally wrap with kitchen twine to mimic salami casing.
  6. Slice and Serve: Cut the chocolate salami into slices and enjoy as a delicious no-bake dessert.

Notes

  • Use vegan butter and vegan cookies to make this recipe completely vegan.
  • The optional cognac or brandy adds depth of flavor but can be omitted for a kid-friendly version.
  • Store the chocolate salami in the refrigerator or freezer to keep it firm until serving.
  • Ensure the chocolate and butter mixture is not overheated to avoid burning and maintain smooth texture.
  • You can substitute walnuts with other nuts like hazelnuts or almonds based on preference.
