4 from 1 review

This easy canapés recipe offers a delightful mix of flavors and textures, combining creamy ricotta, fresh veggies, smoked salmon, and sweet fruit toppings on crisp baguette slices. Perfect for entertaining, these bite-sized treats can be customized with a variety of fresh herbs and drizzled honey for an elegant appetizer in just 15 minutes.

  • Total Time: 15 minutes
  • Yield: 8 servings

Ingredients

Base

  • 1 Baguette (toasting each piece is optional)
  • 15 oz whole milk ricotta

Vegetable Toppings

  • 2 radishes (sliced thin)
  • 1 cucumber (sliced thinly)

Protein Toppings

  • 6 quail eggs (hard boiled, or hen’s eggs as an alternative)
  • 5 oz smoked salmon

Fruit Toppings

  • 1 orange (premiumed)
  • 1/2 cup blueberries (halved)
  • 1/2 cup strawberries (sliced)
  • 1/2 cup cherries (pitted and halved)

Additional Ingredients

  • 1/4 cup honey
  • 2 sprigs mint leaves
  • 2 sprigs fresh dill
  • 2 tbsp fresh chives (chopped)

Instructions

  1. Prepare the bread: Cut the baguette into half-inch slices. For extra crunch, you can toast the slices or brush them with olive oil and bake at 400°F for a few minutes until golden.
  2. Spread ricotta: Generously spread whole milk ricotta cheese on each baguette slice, creating a creamy base for the toppings.
  3. Add toppings: Arrange toppings thoughtfully to balance flavors. Pair smoked salmon with fresh dill, cucumber slices with mint leaves, radishes with dill, and hard boiled eggs with chopped chives. For the fruit toppings (orange segments, blueberries, strawberries, and cherries), drizzle with honey for sweetness.

Notes

  • You can use hen’s eggs instead of quail eggs for easier preparation.
  • Toasting the baguette slices adds extra texture but can be skipped if a softer canapé is preferred.
  • Feel free to experiment with herbs to suit your taste.
  • Preparing all ingredients ahead of time makes assembly faster and smoother.
