Hummus Base
- 2 (14 ounce) cans chickpeas, drained and rinsed (reserve ¼ cup for topping)
- ½ cup tahini
- 4 garlic cloves, minced
- ¼ cup dill pickle juice
- ⅓ cup dill relish
- ¼ cup olive oil
- ½ lemon, juiced
- 1 teaspoon dried dill

- Pinch crushed red pepper flakes
- ¼ to ½ cup ice water
Toppings
- ½ cup diced dill pickles
- Reserved ¼ cup whole chickpeas
- Fresh dill sprigs
- Olive oil, for drizzling
Instructions
- Prepare Chickpeas: Place most of the drained chickpeas in a food processor, reserving about ¼ cup for topping. Pulse and blend the chickpeas until they begin to break down into a coarse texture.
- Add Tahini: Add the tahini to the chickpeas in the food processor and blend until the mixture is combined and creamy.
- Incorporate Flavorings: Add minced garlic, dill pickle juice, dill relish, olive oil, dried dill, lemon juice, crushed red pepper flakes, and a generous pinch of kosher salt and black pepper. Blend until the mixture is smooth and creamy.
- Adjust Texture: While blending, stream in ice water gradually, starting with ¼ cup and adding more up to ½ cup as needed, until the hummus reaches a smooth and creamy consistency. Taste the hummus and adjust seasoning if necessary by adding more salt, pepper, or dill relish.
- Serve and Garnish: Transfer the hummus to a serving bowl or plate. Drizzle with olive oil, then top with the reserved whole chickpeas, diced dill pickles, and fresh dill sprigs. Serve immediately with fresh veggies, crackers, or pita bread.
Notes
- For a thinner consistency, add more ice water gradually until desired smoothness is achieved.
- Reserve some whole chickpeas and diced pickles for garnish to add texture contrast.
- This hummus is best served fresh but can be stored covered in the refrigerator for up to 3 days.
- If you prefer a spicier kick, increase the crushed red pepper flakes or add a dash of hot sauce.
