Ingredients
Crispy Herb Fritters
- 4 cups roughly chopped fresh herbs (such as parsley, cilantro, basil, dill, chives)
- 3 eggs
- ¾ cup milk
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- 1 tsp kosher salt
- ½ tsp pepper
- 1 cup shredded mozzarella cheese
- ½ cup shredded parmesan cheese
- Vegetable oil, to fry
Yogurt Dipping Sauce
- 1 cup plain yogurt
- 2 tbsp apple cider vinegar
- 2 garlic cloves, minced
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh chives
- 1 tsp honey
- ½ tsp kosher salt
- ¼ tsp pepper
Instructions
- Prepare the herbs: Wash the herbs thoroughly and dry them completely using a tea towel or salad spinner. Pluck the leaves from their stems and roughly chop the herbs. Set aside until ready to use.
- Make the batter: In a mixing bowl, whisk together the milk and eggs until combined. Add the all-purpose flour, baking powder, kosher salt, and pepper. Whisk to form a smooth batter. Stir in the shredded mozzarella and parmesan cheeses, then fold in the chopped fresh herbs until evenly distributed. You may refrigerate the batter for a few hours before frying if desired.
- Heat the oil: Place a wide skillet over medium heat and pour in enough vegetable oil to cover the bottom of the pan about 1/8 inch deep. Heat until shimmering and hot.
- Fry the fritters: Drop spoonfuls of batter into the hot oil and gently flatten each into a 2-inch diameter fritter. Add 4 or 5 fritters per batch without overcrowding. Fry until the bottoms are golden brown, about 3 to 4 minutes. Carefully flip each fritter and cook the other side for 2 minutes until golden and cooked through.
- Drain the fritters: Transfer the cooked fritters to a rack set over a baking sheet to drain excess oil. Repeat frying with the remaining batter until all fritters are cooked.
- Prepare the yogurt dipping sauce: In a small bowl, combine the plain yogurt, apple cider vinegar, minced garlic, chopped dill, chopped chives, honey, kosher salt, and pepper. Stir to blend well. Refrigerate until serving.
- Serve: Arrange the crispy herb fritters on a serving platter and serve warm alongside the chilled yogurt dipping sauce for dipping and enjoying.
Notes
- You can use a mix of fresh herbs such as parsley, cilantro, basil, dill, and chives for the best flavor.
- The batter can be made ahead and refrigerated for up to several hours before frying to save time.
- If the fritters stick initially when frying, keep cooking; the melting cheese will release them from the pan as they brown.
- The sauce can be adjusted to taste with more or less honey or vinegar depending on your preference.
