Ingredients
Steak Bites
- 1 tablespoon extra virgin olive oil
- 1 pound steak, cut into 1-inch pieces (top sirloin or ribeye recommended)
Cowboy Butter
- 1 recipe cowboy butter, divided
Instructions
- Heat oil. To a medium skillet over medium-high heat, add olive oil. Once the oil is hot and shimmering, you are ready to cook the steak.
- Cook steak. Place steak bites in a single layer in the skillet (working in batches if needed) and sear for 1 ½ to 2 minutes without moving to get a nice crust. Flip and cook for another 1 to 2 minutes, or until steak reaches your desired doneness.
- Reduce heat and add cowboy butter. Reduce the heat to medium. Add half of the cowboy butter directly to the pan and toss the steak bites to coat evenly with the butter sauce.
- Glaze steak. Cook for 1 additional minute, allowing the butter to melt completely and the steak to be evenly glazed in the flavorful sauce.
- Melt remaining cowboy butter. Melt the remaining cowboy butter in the microwave and serve it on the side for dipping or drizzling over the steak bites.
Notes
- Use top sirloin or ribeye for best flavor and tenderness.
- Make sure the oil is hot before adding the steak to get a proper sear.
- Work in batches if your skillet is small to avoid overcrowding and steaming the steak instead of searing.
- The cowboy butter can be made ahead and stored in the fridge for convenience.
