Instructions
- Prepare baking sheets: Line two baking sheets with parchment paper and set them aside to be ready for the shaped dough.
- Mix and knead dough: In the bowl of a stand mixer fitted with a dough hook, combine warm water, instant yeast, sugar, melted butter, and fine sea salt. Gradually add bread flour while mixing on low speed. Increase speed to medium and knead for 10–15 minutes until the dough is tacky, very elastic, and smooth. Add flour tablespoon by tablespoon if dough is too sticky.
- First rise: Transfer the dough to a lightly oiled bowl and cover it tightly with plastic wrap. Let it rest in a warm spot until doubled in size, approximately 1 to 1 1/2 hours, depending on your kitchen temperature.
- Shape dough portions: Once risen, divide the dough into 12 equal portions (about 57 grams each) using a kitchen scale for accuracy. Roll each portion into an 8-inch long log. Place the logs spaced about 2 inches apart on the prepared parchment-lined baking sheets.
- Second rise: Cover the shaped dough with a cloth or plastic wrap and let it rise until doubled, approximately 1 to 1 1/2 hours.
- Bake breadsticks: Preheat the oven to 400°F (200°C). Bake the breadsticks for 12 to 14 minutes or until golden brown.
- Add toppings and serve: Immediately after baking, brush the hot breadsticks generously with melted butter. Mix kosher salt and garlic powder and sprinkle evenly over them. Serve warm for the best taste and texture.
- Reheating tips: To refresh leftover breadsticks, place them on a baking sheet and heat in a 425°F oven for 4 to 5 minutes until warmed through. Optionally, reapply melted butter and garlic salt mixture to enhance flavor.
