Ingredients
1 1/2 cups brown sugar
1/3 cup oil (canola, vegetable, or olive oil)
1 egg
1 cup buttermilk (or 1 cup milk + 1 tbsp white vinegar)
1 tsp vanilla
1 tsp baking soda
2 1/2 cups flour
2 1/2 cups chopped Honeycrisp apples (or other crisp apples)
1/2 cup sugar
1 tsp cinnamon
1 tbsp butter, melted
Instructions
- Preheat oven to 325°F. Grease or line a 9×13-inch baking dish with parchment paper.
- In a large bowl, whisk together brown sugar, oil, and egg until combined.
- Stir in buttermilk, vanilla, and baking soda.
- Add flour and mix until just combined. Do not overmix.
- Fold in chopped apples gently.
- Pour batter into prepared baking dish and spread evenly.
- Mix sugar, cinnamon, and melted butter. Sprinkle evenly over batter.
- Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool slightly before serving. Enjoy plain or with honey butter, whipped cream, or ice cream.

- Store at room temperature for up to 2 days or refrigerate up to 5 days.
- Freeze individual slices, tightly wrapped, for up to 2 months.
- Use any crisp apple variety—Honeycrisp, Gala, Fuji, or Granny Smith.
- Don’t cover the cake while cooling to keep the topping crunchy.
- Add nuts, raisins, or spices for variations.
