Instructions

- Add egg and vanilla: Incorporate the egg and vanilla extract; beat until well combined and smooth.
- Add dry ingredients: Spoon and level the gluten-free flour, baking soda, baking powder, salt, and instant coffee powder into the mixture, excluding the chocolate chips.
- Mix dry and wet: Mix the dough until just combined, then gently fold in the semi-sweet chocolate chips.
- Chill dough: Place the dough in the refrigerator and chill for 20-30 minutes to firm up for easier handling and better texture.
- Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop dough: Using a 2 tablespoon scoop, portion out the dough onto the prepared baking sheet, ensuring there is enough space between each cookie for spreading.
- Add more chocolate chips: Press a few extra chocolate chips on top of each cookie to enhance chocolate flavor and appearance.
- Bake cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown; remember they continue to firm as they cool.
