Ingredients
Filling
- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 large avocado or 2 small avocados
- 1 jalapeño, chopped
- 1/2 red onion, chopped
- 1/4 cup mustard
- 1/4 cup vegan mayonnaise
- Pepper, to taste
- Garlic salt, to taste
- Hot sauce, to taste
Assembly
- 2 large tortillas or wraps
- 2 handfuls baby spinach
Instructions
- Mash chickpeas and avocado: Add the drained and rinsed chickpeas to a bowl and mash them with a fork until mostly smooth. Add the avocado and continue mashing until the avocado is fully combined with the chickpeas, creating a creamy base.
- Add seasonings: Mix in the chopped jalapeño, red onion, mustard, vegan mayonnaise, pepper, garlic salt, and hot sauce. Stir everything together thoroughly, then taste and adjust seasonings if needed.
- Chill the filling: Place the bowl with the chickpea salad filling in the refrigerator and chill for at least 30 minutes to allow flavors to meld and the mixture to firm up slightly.
- Assemble pinwheels: Spread an even layer of the chilled filling across the surface of each tortilla, reaching all the way to the edges except one side. Place baby spinach on half of the filling to ensure the tortillas will stick when rolled.
- Roll and cut: Starting from the spinach side, tightly roll up each tortilla until fully wrapped. Using a sharp knife, slice each rolled tortilla into 8 equal pinwheels.
- Serve or store: Serve the pinwheels immediately or store them in an airtight container in the refrigerator until ready to enjoy.
Notes
- If the skins of chickpeas bother you, you may peel them by hand for a smoother texture, although this is optional and time-consuming.
- The filling mixture can be prepared up to 6 hours in advance. To prevent avocado browning, you can wait to add avocado until just before assembling the pinwheels.
- Do not add spinach to both sides of the tortilla when assembling; adding it to one side ensures the wrap sticks properly when rolled.
