Cherry Coconut Almond Oat Bars are no-bake, wholesome snack bars made with oats, almonds, coconut, dried cherries, and almond butter, topped with dark chocolate, fresh cherries, and a sprinkle of sea salt. They’re chewy, chocolatey, and refreshing—perfect straight from the fridge or freezer.

Ingredients

1 1/2 cups old fashioned oats

3/4 cup raw almonds

1/2 cup coconut flakes

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup dried cherries

1/2 cup almond butter

1/3 cup honey (or maple syrup for vegan option)

6 oz dark chocolate, chopped

1 tsp coconut oil

Fresh red cherries, pitted and halved, for decorating

Flaked coconut, for decorating

Chopped raw almonds, for decorating

Flaky sea salt, for decorating

Instructions

  1. In a food processor, combine oats, almonds, coconut, cinnamon, and salt. Pulse until fine and flour-like.
  2. Add dried cherries, almond butter, and honey. Pulse until a dough-like mixture forms. Adjust consistency with more oats, nut butter, or honey as needed.
  3. Line an 8×8-inch baking dish with parchment paper. Press the mixture firmly into an even base layer.
  4. Melt dark chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth. Stir in coconut oil.
  5. Spread melted chocolate evenly over the oat base.
  6. Decorate with fresh cherries, flaked coconut, chopped almonds, and flaky sea salt.
  7. Freeze for 20–30 minutes, until chocolate is firm.
  8. Cut into 12 bars using a sharp knife. For clean slices, warm the knife under hot water and dry before cutting.

Notes

  • Store bars in the refrigerator for 3–4 days or freeze for up to 3 weeks.
  • For a vegan version, use maple syrup instead of honey.
  • Add chia seeds, flaxseeds, or protein powder to the base for extra nutrition.
  • Substitute almond butter with peanut, cashew, or sunflower seed butter if preferred.
  • Frozen cherries can be used if thawed and drained, but fresh cherries give the best results.
