Oatmeal Base
- 3/4 cup steel cut oats
- 1/2 cup rolled oats
- 3 cups water or chicken broth
- 1/2 tsp salt (plus more to taste)
- 1 1/2 cups shredded cheddar cheese
Vegetable and Oil
- 1 tbsp olive oil (or more as needed)
- 1 large sweet potato (peeled and diced small)
- 1/4 cup shallot (minced)
- 2 cups spinach
Eggs and Garnish
- 3 eggs
- Green onion for garnish

Instructions
- Sauté Sweet Potato: Heat olive oil in a large skillet over medium heat. Add the peeled and diced sweet potato and cook for 4-5 minutes until it starts to soften.
- Cook Oats: In a large saucepan, combine steel cut oats, rolled oats, water or chicken broth, and salt. Bring to a boil, then reduce heat to a simmer. Stir occasionally and cook until the oats are softened and creamy, about 20 minutes.
- Sauté Shallot and Spinach: Add minced shallot and spinach to the skillet with sweet potato. Sauté for 2 minutes until the spinach has wilted, then remove from the heat to prevent overcooking.
- Cook Eggs: Spray a separate skillet with nonstick spray and cook the eggs to your preferred level of doneness, whether sunny side up, over easy, or scrambled.
- Add Cheese to Oats: Once the oats are cooked, remove the saucepan from heat and stir in shredded cheddar cheese until melted and fully incorporated.
- Assemble the Dish: Divide the cheesy oatmeal into three bowls. Top each bowl with a generous portion of the sweet potato, shallot, and spinach mixture. Add a cooked egg on top of each serving. Garnish with sliced green onions and optional hot sauce, and season with additional salt and pepper to taste before serving.
