Ingredients

2 oz (60 g) ham, cubed

Instructions

  1. In a bowl, whisk together eggs, cream, Old Bay, salt, and pepper. Set aside.
  2. Heat oil or butter in a large frying pan over medium-high heat. Add potatoes and cook until golden and crisp.
  3. Stir in ham, then pour in the egg mixture. Cook gently over low heat until eggs are partially set but still slightly soft.
  4. Sprinkle cheese over the top. Cover and cook on low until cheese melts and eggs finish cooking.
  5. Serve hot with sour cream and chopped chives.
