Ingredients
For the scramble:
4 large eggs

1.5 tablespoons frying oil or clarified butter
4 cups (600 g) chopped cooked potatoes
2 oz (60 g) ham, cubed
1 cup shredded cheese (cheddar and Gruyere recommended)
To serve:
Sour cream
Chives, chopped
Instructions
- In a bowl, whisk together eggs, cream, Old Bay, salt, and pepper. Set aside.
- Heat oil or butter in a large frying pan over medium-high heat. Add potatoes and cook until golden and crisp.
- Stir in ham, then pour in the egg mixture. Cook gently over low heat until eggs are partially set but still slightly soft.
- Sprinkle cheese over the top. Cover and cook on low until cheese melts and eggs finish cooking.
- Serve hot with sour cream and chopped chives.
