Cheesy Beef Fiesta Wraps are quick, hearty, and full of Tex-Mex flavor. Seasoned ground beef, melted cheese, and fresh toppings are wrapped in warm tortillas for a comforting, family-friendly meal ready in just 20 minutes.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

1 lb ground beef

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade seasoning)

1/2 cup beef broth (or chicken/vegetable broth)

4 large flour tortillas

1 cup shredded cheddar cheese

1/2 cup sour cream

1 medium tomato, diced

1/2 cup shredded lettuce

Optional toppings: salsa, guacamole or avocado slices, jalapeños

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add ground beef and cook, breaking it apart, until browned.
  3. Stir in taco seasoning and broth. Simmer 3–5 minutes until liquid is absorbed and beef is well seasoned.
  4. Warm tortillas in a dry skillet or microwave for 20–30 seconds until soft.
  5. Assemble wraps by adding beef mixture to the center of each tortilla. Top with shredded cheese, sour cream, diced tomatoes, and lettuce.
  6. Fold in the sides of the tortilla and roll tightly.
  7. Serve immediately with optional toppings like salsa, guacamole, or jalapeños.

Notes

  • Store cooked beef mixture separately in the fridge for up to 4 days.
  • Freeze beef filling for up to 2 months; thaw and reheat before using.
  • Assembled wraps are best eaten fresh.
  • Use whole wheat, spinach, or gluten-free tortillas as alternatives.
  • Add bell peppers, corn, or rice for extra flavor and heartiness.
