Ingredients

Meat and Seasoning

  • 1 tablespoon olive oil
  • 2 pounds ground beef, 80/20
  • Salt and freshly cracked pepper to taste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Tabasco sauce (optional)

Vegetables and Aromatics

  • 1 peeled and small diced yellow onion (about 1 to cups diced)
  • 3 finely minced garlic cloves
  • 1 large dill pickle cut into thin slices (optional)

Cheese and Bread

  • ½ pound shredded mild cheddar cheese
  • 6 slices American cheese
  • 1 pack of sweet Hawaiian rolls, sliced in half, keeping buns attached
  • 1 tablespoon sesame seeds

Condiments

  • Aioli, ketchup, or mustard for dipping

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) with no fan and allow it to come to temperature while you prepare the sliders.
  2. Brown the beef: Heat olive oil in a large non-stick skillet over medium-high heat. Add ground beef, season with salt and pepper, and break it up as it cooks. Sauté until beef is browned on all sides. Remove beef and set aside on a plate.
  3. Caramelize the onions: In the same skillet, add diced onions and a pinch of salt. Sauté over medium heat for 4 to 5 minutes, then reduce heat to low and cook for about 10 minutes until onions are browned and tender. Stir in minced garlic and cook for another 30 to 45 seconds until fragrant.
  4. Combine beef mixture: Return the browned beef to the skillet with onions and garlic. Add Worcestershire sauce, Tabasco sauce if using, and half of the shredded cheddar cheese. Stir everything together until cheese is fully melted and mixture is well combined. Taste and adjust seasoning if necessary.
  5. Assemble sliders: Place the bottom halves of the Hawaiian rolls in a 13×9-inch casserole dish. Arrange slices of American cheese evenly over the buns. Spread the beef, onion, and cheese mixture evenly over the cheese layer. Sprinkle the remaining shredded cheddar cheese on top of the beef mixture, then layer sliced pickles evenly.
  6. Add top buns and brush: Place the top halves of the Hawaiian rolls over the filling. Use some of the rendered fat left in the skillet or melted butter to brush the tops of the buns. Sprinkle sesame seeds evenly over the buns.
  7. Bake covered: Cover the casserole dish tightly with aluminum foil and bake on the middle rack for 20 minutes.
  8. Bake uncovered: Remove the foil and continue baking for another 20 minutes. The cheese should be melted, and the buns toasted lightly but still soft and pillowy.
  9. Serve: Remove from oven and serve warm with optional dipping sauces such as aioli, ketchup, or mustard.

  • Caramelizing onions thoroughly for 15-20 minutes adds unmatched depth of flavor to the sliders.
