Ingredients

Biscuit Base

  • 1 box Cheddar Bay biscuit mix
  • ¾ cup milk

Beef Mixture

  • 1 lb ground beef
  • 1 cup onion, diced
  • 1 red bell pepper, diced
  • ¼ cup water
  • 1 packet taco seasoning

Toppings

  • 1 cup Colby Jack cheese, shredded
  • 2 cups cheddar cheese, shredded
  • 1 can RO*TEL (diced tomatoes and green chilies)
  • ½ cup mayonnaise
  • ½ cup sour cream

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350 degrees Fahrenheit. Lightly spray a 9 x 13-inch casserole dish with non-stick cooking spray to prevent sticking.
  2. Make Biscuit Crust: In a bowl, combine the Cheddar Bay biscuit mix, the enclosed seasoning packet, and ¾ cup of milk. Stir until well combined, then spread the biscuit mixture evenly in the bottom of the prepared casserole dish.
  3. Par-Bake Biscuit Base: Bake the biscuit base in the preheated oven for 5 minutes to set it slightly before adding the toppings.
  4. Cook Ground Beef Mixture: While the biscuit base is baking, brown the ground beef in a large skillet over medium heat. Use a spatula to break up the meat as it cooks. Once browned, drain any excess grease. Add the diced onion and red bell pepper to the skillet and cook for 1 to 2 minutes until slightly softened.
  5. Add Seasoning and Water: Stir in ¼ cup water and the packet of taco seasoning into the beef mixture. Cook for another minute to allow the flavors to meld.
  6. Layer Beef Over Biscuit Base: Remove the biscuit base from the oven and spread the seasoned beef mixture evenly over it. Then, spoon the can of RO*TEL (diced tomatoes with green chilies) over the ground beef layer.
  7. Prepare and Spread Cheese Mixture: In a separate bowl, combine the sour cream, mayonnaise, and shredded Colby Jack cheese. Mix well and spread this creamy cheese layer evenly over the RO*TEL layer.
  8. Add Cheddar Cheese and Bake: Top the casserole with the shredded cheddar cheese. Return the casserole dish to the oven and bake for 30 minutes until the cheese is melted and bubbly, and the casserole is heated through.
  9. Cool and Serve: Remove the casserole from the oven and let it cool for at least 10 minutes to set before cutting into portions and serving.
