Ingredients
1 cup pitted dates
½ cup old-fashioned rolled oats
¼ cup chopped pecans
¼ cup chia seeds
2 medium carrots (about 4 oz), finely chopped
1 teaspoon vanilla extract
¾ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground turmeric
¼ teaspoon salt
Pinch of ground pepper
Instructions
- In a food processor, combine dates, oats, pecans, and chia seeds. Pulse until well chopped and mixture starts to stick together.
- Add chopped carrots, vanilla extract, cinnamon, ginger, turmeric, salt, and pepper. Process until the mixture becomes a cohesive paste.
- Scoop out the mixture using a tablespoon and roll into bite-sized balls.
- Enjoy immediately or store in the fridge or freezer for later.
Notes
- Wet your hands slightly to prevent sticking when rolling the bites.
- Use grated carrots if your food processor has trouble with chopped ones.
- Store in the fridge for up to 1 week or freeze for up to 3 months.
- Add plant-based protein powder for an extra boost.
- Swap pecans with other nuts or seeds for allergy-friendly options.
