Carrot Cake Energy Bites are a quick, no-bake snack that delivers the warm, spiced flavor of carrot cake in a healthy, bite-sized form. Naturally sweetened with dates and packed with oats, chia seeds, and pecans, they’re perfect for on-the-go energy.

  • Total Time: 15 minutes
  • Yield: 22 bites

Ingredients

1 cup pitted dates

½ cup old-fashioned rolled oats

¼ cup chopped pecans

¼ cup chia seeds

2 medium carrots (about 4 oz), finely chopped

1 teaspoon vanilla extract

¾ teaspoon ground cinnamon

½ teaspoon ground ginger

¼ teaspoon ground turmeric

¼ teaspoon salt

Pinch of ground pepper

Instructions

  1. In a food processor, combine dates, oats, pecans, and chia seeds. Pulse until well chopped and mixture starts to stick together.
  2. Add chopped carrots, vanilla extract, cinnamon, ginger, turmeric, salt, and pepper. Process until the mixture becomes a cohesive paste.
  3. Scoop out the mixture using a tablespoon and roll into bite-sized balls.
  4. Enjoy immediately or store in the fridge or freezer for later.

Notes

  • Wet your hands slightly to prevent sticking when rolling the bites.
  • Use grated carrots if your food processor has trouble with chopped ones.
  • Store in the fridge for up to 1 week or freeze for up to 3 months.
  • Add plant-based protein powder for an extra boost.
  • Swap pecans with other nuts or seeds for allergy-friendly options.
