3/4 cup sugar
3 large eggs
1 1/2 tsp vanilla extract
Apples:
3 Granny Smith apples, peeled, cored, and finely chopped (about 3 cups)
2 tbsp sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Streusel Topping:
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 cup butter, softened
Drizzle:
1/2 cup caramel topping
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment or foil.
- Combine flour and brown sugar for crust. Cut in butter until crumbly. Press into pan and bake 15 minutes until lightly golden.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Pour over warm crust.
- Toss apples with sugar, cinnamon, and nutmeg. Spread evenly over cheesecake layer.
- Mix brown sugar, flour, oats, and butter with fingers until crumbly. Sprinkle over apples.
- Bake 40–45 minutes until filling is set. Cool completely at room temperature.
- Drizzle with caramel topping before serving. Chill for best texture.
Notes
- Swap Granny Smith apples for Honeycrisp or Fuji for a sweeter flavor.
- Use a graham cracker crust instead of shortbread for variation.
- Add chopped pecans or walnuts to streusel for crunch.
- Try salted caramel for a sweet-salty finish.
- Replace cinnamon and nutmeg with apple pie spice for depth.
