Caramel Apple Cheesecake Bars are a decadent layered dessert with a buttery shortbread crust, creamy cheesecake filling, spiced apples, crumbly streusel, and a caramel drizzle. They combine the best of cheesecake and apple pie in one irresistible bar.

  • Total Time: 50 minutes
  • Yield: 24 bars

Ingredients

Crust:

2 cups all-purpose flour

1/2 cup firmly packed brown sugar

1 cup butter, softened

Cheesecake Filling:

3 packages (8 oz each) cream cheese, softened

3/4 cup sugar

3 large eggs

1 1/2 tsp vanilla extract

Apples:

3 Granny Smith apples, peeled, cored, and finely chopped (about 3 cups)

2 tbsp sugar

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

Streusel Topping:

1 cup firmly packed brown sugar

1 cup all-purpose flour

1/2 cup quick-cooking oats

1/2 cup butter, softened

Drizzle:

1/2 cup caramel topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment or foil.
  2. Combine flour and brown sugar for crust. Cut in butter until crumbly. Press into pan and bake 15 minutes until lightly golden.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Pour over warm crust.
  4. Toss apples with sugar, cinnamon, and nutmeg. Spread evenly over cheesecake layer.
  5. Mix brown sugar, flour, oats, and butter with fingers until crumbly. Sprinkle over apples.
  6. Bake 40–45 minutes until filling is set. Cool completely at room temperature.
  7. Drizzle with caramel topping before serving. Chill for best texture.

Notes

  • Swap Granny Smith apples for Honeycrisp or Fuji for a sweeter flavor.
  • Use a graham cracker crust instead of shortbread for variation.
  • Add chopped pecans or walnuts to streusel for crunch.
  • Try salted caramel for a sweet-salty finish.
  • Replace cinnamon and nutmeg with apple pie spice for depth.
