- Prepare Ice Bath: Fill a large bowl with ice water and set it aside. This will be used to cool the orange slices quickly after boiling to stop the cooking process.
- Blanch Orange Slices: Pour 4 cups of water into a large saucepan and bring it to a boil over high heat. Add the thinly sliced oranges and boil for 2 minutes. This softens the rind and reduces bitterness. Remove the orange slices with a slotted spoon and immediately transfer to the ice water bath. Discard the boiling water.
- Make Sugar Syrup: In the same saucepan, add the remaining 4 cups of water and 4 cups of granulated sugar. Heat over medium heat and stir occasionally until all the sugar has dissolved and the mixture reaches a gentle boil.
- Simmer Orange Slices: Reduce heat to medium-low and return the orange slices to the saucepan. Simmer gently for 45 to 60 minutes, or until the orange rinds become slightly translucent. Swirl the pan gently every 15 minutes to ensure all slices get evenly coated with the syrup.
- Dry the Slices: Using tongs or a slotted spoon, transfer the candied orange slices to a cooling rack set over a large baking sheet. Allow them to dry at room temperature for up to 24 hours until they feel tacky but no longer wet.
- Coat and Store: If desired, dip the dried candied slices in granulated sugar to add a sparkling, sweet coating. Use them immediately or store in an airtight container in the refrigerator for up to one month.
Notes
- For best results, use thinly sliced oranges to allow the syrup to penetrate evenly.
- If you prefer less sweetness, you can reduce the sugar slightly but keep in mind it acts as a preservative.
- Allowing the slices to dry thoroughly improves texture and shelf-life.
- These candied slices make beautiful garnishes for cocktails, desserts, or gift packaging.
