These Buffalo Chicken Biscuits are a flavorful twist on classic comfort food, combining tender shredded chicken smothered in creamy buffalo sauce and ranch dressing, layered between flaky Pillsbury biscuits, and baked to golden perfection. Perfect as a hearty appetizer or a satisfying snack, they deliver a delicious blend of spicy, tangy, and cheesy flavors in every bite.

  • Total Time: 34 minutes
  • Yield: 6 servings

Ingredients

Biscuits

  • 1 can Pillsbury flaky biscuits (8 biscuits)

Buffalo Chicken Filling

  • 8 oz cream cheese
  • 3/4 cup buffalo sauce
  • 3 tbsp ranch dressing
  • 1 tbsp ranch dressing seasoning
  • 2 cups shredded chicken
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the biscuits.
  2. Prepare Buffalo Chicken Mixture: In a pan over medium-high heat, combine cream cheese, buffalo sauce, ranch dressing, and ranch dressing seasoning. Stir and heat until the mixture is fully melted and smooth. Then add shredded chicken and mix thoroughly. Remove from heat and set aside.
  3. Separate Biscuit Layers: Take apart each biscuit and carefully peel it into three separate flakey layers to help create a layered dish.
  4. Assemble Biscuits: On a flat surface, lay down a single biscuit layer, spoon some buffalo chicken mixture evenly over it, and sprinkle with mozzarella cheese. Add another biscuit layer on top, followed by more chicken mixture and cheese. Repeat once more, then finish with a final biscuit layer on top.
  5. Repeat Assembly: Repeat the layering process to make six full assembled biscuits using all biscuit layers and filling.
  6. Prepare Muffin Tin and Bake: Lightly spray a muffin tin with cooking spray. Place the stacked biscuits into each muffin cup. Bake in the preheated oven for 13-16 minutes, or until the biscuits turn a golden brown color and are cooked through.

Notes

  • Ensure the cream cheese is softened before melting for easier mixing.
  • You can substitute shredded mozzarella with cheddar or a cheese blend for a different flavor.
  • Adjust buffalo sauce quantity based on preferred spice level.
  • Use cooked shredded chicken from rotisserie or leftovers for convenience.
  • Serve warm for best flavor and texture.
