Ingredients

For the Crumble Base

  • 1 cup unsalted butter, at room temperature
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1 cup blood orange jam

For the Glaze

  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla bean paste or the seeds of 1 vanilla bean or 1 teaspoon vanilla extract
  • Milk or cream to thin (about 1-2 tablespoons)

Instructions

  1. Preheat and Prepare Pan: Set your oven to 350°F (175°C). Lightly spray and line a 9×9-inch square baking pan with parchment paper, leaving long ends to easily lift the bars for cutting once cooled. This step is optional but highly recommended for easy removal.
  2. Cream Butter and Sugar: In a mixing bowl, cream together the unsalted butter and sugar until the mixture is well combined and fluffy, which usually takes about 2-3 minutes using a handheld or stand mixer.
  3. Add Flavor and Flour: Blend in the salt and vanilla extract. Gradually incorporate the all-purpose flour until just combined. The dough will be crumbly but ensure no dry flour remains.
  4. Form Crust: Take about two-thirds of the dough and drop crumbles evenly over the bottom of the prepared pan. Pat down firmly and evenly to create the crust layer.
  5. Add Jam Layer: Spread the blood orange jam evenly over the crust in the pan, making sure it covers the surface uniformly.
  6. Top with Remaining Crumble: Using your fingertips, crumble the remaining dough over the jam layer to form a crumble topping.
  7. Bake: Place the pan in the preheated oven and bake for 35 to 40 minutes, or until the bars start to turn golden around the edges and the crumble topping looks set.
