Instructions
- Prepare the Base: Carefully press the large flour tortilla into the bottom of a baking dish, ensuring it fits well and forms a base for the quiche.
- Add Spinach Layer: Spread the chopped spinach evenly over the bottom of the tortilla to create a fresh vegetable layer.
- Mix Egg and Veggies: In a bowl, whisk the eggs thoroughly, then add in the halved cherry tomatoes, halved olives, sliced spring onions, diced red bell pepper, grated cheddar, and about three-quarters of the crumbled feta cheese. Mix everything well to combine all flavors.
- Assemble the Quiche: Pour the egg and vegetable mixture evenly over the spinach layer inside the tortilla-lined baking dish. Sprinkle the remaining feta cheese over the top for an extra burst of flavor.
- Bake: Place the dish in a preheated oven set to 200°C (180°C fan, 400°F, Gas Mark 6) and bake for 20 to 25 minutes, or until the egg is fully set and the top is golden.
- Serve: Remove from the oven and garnish with freshly chopped chives. Serve warm for a hearty and satisfying breakfast.
Notes
- Do not overfill the flour tortilla; leave some space at the top as the egg mixture will rise during baking.
- For a spicy kick, add red chili flakes or diced jalapeños to the egg mixture.
- For a thicker crust, double up the flour tortillas by using two instead of one.
- The spinach can either be layered at the bottom or mixed into the egg mixture according to your preference.
