  • 40 g mature cheddar cheese, grated
  • 20 g feta cheese, crumbled
  • Chives, chopped for serving

Instructions

  1. Prepare the Base: Carefully press the large flour tortilla into the bottom of a baking dish, ensuring it fits well and forms a base for the quiche.
  2. Add Spinach Layer: Spread the chopped spinach evenly over the bottom of the tortilla to create a fresh vegetable layer.
  3. Mix Egg and Veggies: In a bowl, whisk the eggs thoroughly, then add in the halved cherry tomatoes, halved olives, sliced spring onions, diced red bell pepper, grated cheddar, and about three-quarters of the crumbled feta cheese. Mix everything well to combine all flavors.
  4. Assemble the Quiche: Pour the egg and vegetable mixture evenly over the spinach layer inside the tortilla-lined baking dish. Sprinkle the remaining feta cheese over the top for an extra burst of flavor.
  5. Bake: Place the dish in a preheated oven set to 200°C (180°C fan, 400°F, Gas Mark 6) and bake for 20 to 25 minutes, or until the egg is fully set and the top is golden.
