These baked za’atar egg buns with spinach and feta are a savory and satisfying brunch upgrade, combining creamy spinach, tangy feta, and perfectly baked eggs in toasty buns, all enhanced by the earthy flavor of za’atar seasoning.

Ingredients

3 kaiser rolls or French buns

6 eggs

3 cups spinach

1/2 teaspoon cumin

2 garlic cloves, minced

1 teaspoon za’atar seasoning

Sea salt and black pepper, to taste

Olive oil

Butter

Sour cream for serving

1/4 cup cream

2 ounces feta, crumbled

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over low heat and sauté the garlic until fragrant.
  3. Increase the heat, add the spinach, and cook for about 30 seconds until wilted.
  4. Stir in the cream and season with salt and pepper. Remove from heat.
  5. Slice the buns in half horizontally and press into the center of each half to form a well.
  6. Grease an ovenproof dish with butter and place the bun halves inside.
  7. Divide the creamy spinach among the bun wells.
  8. Crack an egg into each well, then sprinkle crumbled feta around the eggs.
  9. Season with cumin, za’atar, a pinch of salt, and black pepper. Drizzle a little olive oil over the top.
  10. Bake for 15–20 minutes, depending on preferred egg doneness.
  11. Serve immediately with a dollop of sour cream.

Notes

  • You can use gluten-free buns as a substitute.
  • To make ahead, prepare the spinach filling and assemble buns before baking.
  • For a spicier kick, add chili flakes or harissa.
  • Use Greek yogurt instead of sour cream if desired.
