- 1 Tbsp avocado oil
- 1 medium-sized yellow onion (finely diced)
- 4 cloves garlic (minced)
- 1 pound ground beef
Seasonings
- 2 tsp paprika
- 1 tsp Italian seasoning

- ¼ tsp black pepper (to taste)
Liquids and Sauces
- 1 (15-oz) can tomato sauce
- 1 (15-oz) can diced tomatoes
- 1 ½ cups beef broth
- 1 Tbsp soy sauce or Worcestershire sauce

- 3 Tbsp fresh parsley (finely chopped)
- 1 cup elbow noodles
- ½ cup grated cheddar cheese or colby jack cheese (optional)
Instructions
- Heat the oil and sauté onions. Heat the avocado oil in a Dutch oven or large deep skillet over medium-high heat. Add the finely diced yellow onion and cook, stirring occasionally, until translucent, about 3 to 5 minutes.
- Add garlic. Stir in the minced garlic and sauté for an additional 2 minutes to release its aroma.
- Brown the ground beef. Add the ground beef, breaking it up with a spatula into smaller pieces. Cook until the beef is mostly browned.
- Add seasonings. Sprinkle in the paprika, Italian seasoning, sea salt, and black pepper. Stir well to coat the beef and onions evenly with the spices.
- Pour in tomato sauce and liquids. Add the tomato sauce, diced tomatoes, beef broth, and soy sauce or Worcestershire sauce to the pot, stirring to combine.
- Simmer the sauce. Bring the mixture to a full boil, then reduce heat to medium and let it simmer gently for 8 to 10 minutes, stirring occasionally to blend flavors.
- Cook pasta in the sauce. Stir in the elbow noodles and cook at a gentle simmer for 7 to 12 minutes, until the noodles are tender. Stir occasionally to prevent sticking. Add fresh chopped parsley in the last minute of cooking.
- Allow sauce to thicken. Note that as the goulash rests, the noodles absorb more sauce, thickening the dish from its initial saucy state.
- Serve. Spoon the goulash into bowls and optionally top with grated cheddar, colby jack, or parmesan cheese for added richness.
Notes
- Use elbow noodles or any short pasta shape that holds sauce well.
- You can substitute ground turkey or chicken for a lighter protein option.
- Adjust seasoning to taste, especially salt and pepper.
- Leftovers thicken over time and reheat well with a splash of beef broth or water.
- For a spicier kick, add a pinch of cayenne pepper or hot sauce.
