Additional Ingredients

  • 3 Tbsp fresh parsley (finely chopped)
  • 1 cup elbow noodles
  • ½ cup grated cheddar cheese or colby jack cheese (optional)

Instructions

  1. Heat the oil and sauté onions. Heat the avocado oil in a Dutch oven or large deep skillet over medium-high heat. Add the finely diced yellow onion and cook, stirring occasionally, until translucent, about 3 to 5 minutes.
  2. Add garlic. Stir in the minced garlic and sauté for an additional 2 minutes to release its aroma.
  3. Brown the ground beef. Add the ground beef, breaking it up with a spatula into smaller pieces. Cook until the beef is mostly browned.
  4. Add seasonings. Sprinkle in the paprika, Italian seasoning, sea salt, and black pepper. Stir well to coat the beef and onions evenly with the spices.
  5. Pour in tomato sauce and liquids. Add the tomato sauce, diced tomatoes, beef broth, and soy sauce or Worcestershire sauce to the pot, stirring to combine.
  6. Simmer the sauce. Bring the mixture to a full boil, then reduce heat to medium and let it simmer gently for 8 to 10 minutes, stirring occasionally to blend flavors.
  7. Cook pasta in the sauce. Stir in the elbow noodles and cook at a gentle simmer for 7 to 12 minutes, until the noodles are tender. Stir occasionally to prevent sticking. Add fresh chopped parsley in the last minute of cooking.
  8. Allow sauce to thicken. Note that as the goulash rests, the noodles absorb more sauce, thickening the dish from its initial saucy state.
